Lobster is a luxury, but occasional market fluctuations make this delicacy affordable—and it's easy to prepare. If you have a large stockpot or a Dutch oven, you have everything you need to cook these meaty crustaceans. Don't forget the shellfish cracking tools.
- 4 lobsters (at least 1 ¼ lb each)
- 1 tbsp salt
- melted butter and/or lemon wedges
- Fill the bottom of a large pot (large enough to hold the lobsters) with an inch of water. Add salt. Cover and bring to a boil.
- Add the lobsters and cover. Cook until they are bright red. (1 1/2 lbs = 15 minutes; 2lbs = 20 minutes; 2 1/2 lbs = 25 minutes; add 2 - 3 minutes for every additional 1/4 lb, add a few minutes to cooking time if cooking more lobsters).
