Wow the crowd with this showstopping Easter side dish that contrasts crispy, salty bacon with sweet, caramelized carrots.
- 16 medium carrots, trimmed and peeled
- 16 slices bacon
- 2 tbsp honey
- 1 tbsp finely chopped parsley
- Preheat oven to 375°F. Line 2 rimmed baking sheets with parchment. Wrap each carrot with 1 strip of bacon. Arrange on prepared pan with ends of the bacon strips on the bottom, spacing ½-inch apart. Roast 25 min.
- Carefully remove the baking sheets from oven. Brush carrots with the honey and season with coarsely ground black pepper. Continue roasting another 22–27 min., until bacon is crispy and carrots are tender when pierced with tip of knife. Garnish with the parsley.
