Kids and adults alike will never guess that these gluten-free treats contain grated zucchini, which helps give these brownies their moist texture.
Ingredients
- 1 large zucchini
- 2 large eggs
- ½ cup canola oil
- ¾ cup sugar
- 1 tsp vanilla extract
- ½ cup Nature's Promise Almond Flour
- ¼ cup Nature's Promise Organic Coconut Flour
- ⅓ cup unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup semisweet chocolate chips, divided
Steps
- Preheat oven to 350°F. Line an 8x8-inch metal baking pan with parchment. Using a box grater, grate enough zucchini for 1½ packed cups.
- To a large bowl, add the eggs, oil, sugar, and vanilla. Whisk to combine. Stir in grated zucchini. To bowl, add both flours, cocoa powder, baking soda, and salt. Stir mixture until just combined. Stir in ¼ cup chocolate chips.
- Pour the batter into prepared pan. Top evenly with remaining ¼ cup chocolate chips. Bake brownies for 40–45 min., until toothpick inserted into center comes out mostly clean. Using parchment paper, remove brownies from baking pan. Let cool fully before cutting.
