A refreshing rice salad of grated summer squash, spicy arugula, and salty Parmesan accompanies grilled steak for an easy summertime dinner.
Ingredients
- 1 (12 oz) boneless strip steak
- 1 (8.8 oz) pkg precooked Nature's Promise Long Grain White Rice
- 1 large zucchini
- 4 cups arugula
- ¼ cup white balsamic vinaigrette
- ¼ cup finely grated Parmesan cheese
Steps
- Set grill or grill pan to medium-high. Season the steak with salt and pepper. Grill 5–6 min. per side, until desired doneness. Transfer to cutting board and let stand 5 min.
- Meanwhile, heat the rice according to package directions, then let cool slightly. Into a large bowl, coarsely grate the zucchini. To bowl, add the arugula, vinaigrette, Parmesan, and cooled rice. Toss to combine. Season with salt and pepper to taste.
- Thinly slice steak and serve with rice salad.
