Ingredients
- 2 tbsp olive oil
- 2 large ripe mangoes, peeled and cut into spears
- 4 plum tomatoes, halved
- ½ cup finely chopped cilantro
- 2 tbsp lemon juice
- ½ tsp crushed red pepper
Steps
- Set grill to medium-high.
- Brush the oil on mangoes and tomatoes. Season with salt and pepper. Place both on grill and cook 4–5 min., until slightly charred, turning occasionally.
- Let cool slightly and then finely dice. Add to a small bowl and toss with the cilantro, lemon juice, and crushed red pepper. Season with salt and pepper to taste.
