Ingredients
- ½ (16 oz) box linguini
- 1 tbsp olive oil
- 1 lb medium peeled and deveined shrimp
- 1 tbsp minced garlic
- 1 tsp red pepper flakes
- 1 (4 oz) carton heavy cream
- 1 tbsp lemon juice
- 1 cup roasted red pepper strips
- ¼ cup grated Parmesan
Steps
- Bring a large pot of water to boil over high heat. Cook linguini according to package directions. Drain and reserve ½ cup of the pasta water.
- Return the pasta pot back to the stove top and reduce heat to medium high. Add the olive oil, shrimp, garlic and crushed red pepper. Cook for 2-3 minutes or until shrimp are pink and firm.
- Add the cream, reserved pasta water, lemon juice, and roasted red peppers. Bring mixture to a boil and reduce heat to medium. Add the cooked linguini to the pot and toss in the sauce. Sprinkle in Parmesan cheese, bowl up and enjoy!
